"Les Versants" is the new name for the cuvée "Tradition L'Esprit du Temps", new packaging, new name, but it is indeed the same wine that many of you appreciate. The "little" champagne from the Bonnaire house already has a very fine bubble and surprises with its assertive character. There is no secret. With good wine, you make good champagne!

Comments on this cuvée

Champagne Bonnaire "Les Versants" Réserve

La Revue du Vin de France (RVF 2025) : 89/100.

Guide Hachette des Vins 2026 : 1* A beautiful harmony of whites and blacks (30% pinot noir, 20% meunier) is evident in this extra-brut golden yellow wine aged for at least 30 months. The chardonnay, which stands out in the freshness of the aromatic expression (citrus, lime, white fruits, hawthorn) and in the chalky minerality of the palate, seems enriched by the generosity of the pinots. Intensity and finesse.

Technical sheet written by the Domaine :

Cuvée of the three Champagne grape varieties, sourced from the vines of the domaine located on the slopes of the Côte des Blancs (Cramant, Cuis, Bergères-les-Vertus), from the Vallée de la Marne (Fossoy) and from the Montagne de Reims (Bouzy).

Grapes
: 50% Chardonnay, 30% Pinot Noir, 20% Pinot Meunier

Origin : Cramant (Grand Cru), Cuis, Bergères-Les-Vertus (Premier Cru), Fossoy

Vinification : The first fermentation takes place in temperature-controlled stainless steel tanks, ensuring optimal preservation of the primary aromas of the grapes. The Tradition is a blend of wines from several harvests. About 15% of the final blend consists of reserve wines.
After the tirage, the secondary fermentation and aging in the cellar occur under traditional corking. After disgorgement, Les Versants benefits from a low dosage and then rests for 3 months in the cellar before shipment, a necessary time for the wine to assimilate the sugar from the liqueur d'expédition and regain its balance.

Aging : Minimum 30 months

Dosage : Extra Brut (4g/L)

Tasting : Crafted in the pure Champagne tradition, this complex cuvée highlights the art of blending:
- Blend of emblematic crus from the Côte des Blancs, Montagne de Reims, and Vallée de la Marne
- Blend of the three Champagne grape varieties: Chardonnay, Pinot Noir, and Meunier
- Blend of vintages with the wine from the latest harvest and reserve wines
The majority of vinification in tanks is complemented by about 10% aging in small oak barrels, imparting a subtle spicy note to the wine.
The wine is distinguished by its sapidity and aromatic expression (floral notes followed by citrus and ripe fruit). Beautiful patina, intense fruitiness, great finesse: the bubble is creamy, and the finish is refreshing and persistent.
The measured dosage highlights the balance and versatility of this wine, which will bring refinement and pleasure, both as an aperitif and with fine cuisine.

Service : Store the bottle upright - Serve chilled between 6 and 8°C
