RVF Guide to the Best Wines of France 2025 (Sept. 2024) : 93/100. Autour de Jonquières is dense and still a bit compact at this stage, with a well-defined chewiness. But it will integrate, no worries.

This terroir of Jonquières is a cornucopia, it never ceases to reinvent itself, to proclaim itself, and to await the emergence of new terroirs to decide to give its best. At the slightest doubt, it grows; in the face of every difficulty, it rises. A mischievous vintage, the king's fool in a suit and tie, as serious as it is profound, as delicate as it is ostentatious; rarely where you expect it, never elsewhere, and always ready to challenge its peers and defy time.

Technical sheet written by the domaine :

TERROIR : Parcel selection mainly composed of limestone pebbles on the high terraces of Hérault as well as on the last foothills of Larzac, at altitudes around 150 meters; great diversity of structure and texture. A half dozen lieux-dits scattered around Jonquières and in neighboring municipalities, selected for their expressions and complementarities, ensure the balance of this cuvée. Each parcel is unique due to its microclimate, mineral richness, and soil structure.

METHOD OF CULTIVATION : Organic farming, observation, independence of mind, and a global vision guide our approach. Natural and traditional cultivation, biodynamic practices, homemade compost, mineral treatments and plant macerations, plowing, cover cropping, short pruning, heart bud removal, thinning if necessary, manual harvesting, multiple and rigorous sorting.

GRAPE VARIETIES : Old vines of mourvèdre 40%, carignan 40%, syrah 20%.

VINIFICATION : Total destemming, maceration 15 to 25 days depending on the grape varieties and terroirs, gentle extractions by punching down and/or pumping over, temperature control, pneumatic pressing, reintegration of the first presses if necessary.

AGING : 12 months in demi-muids by terroir and grape variety separately, blending and an additional 12 months of aging in large casks. A single bottling, often a light fining, no filtration. Kept for an additional 6 months before commercialization.

SERVICE : There will be a keen interest in tasting this cuvée in its first year and of course forgetting a few bottles to taste at maturity after 7 to 15 years of aging in a good cellar. Decant just before serving, around 14-15 °C. An opened bottle stored in the fridge may be even better the next day and in the following days.

WINE OF INTIMACY, AVOID GROUPS AND LARGE OCCASIONS (a sudden change in temperature would temporarily erase the expression and subtlety).
