Grape variety: Sauvignon blanc 100%
Yield between 55 and 65 hl/ha

Soils: Mainly clay-limestone and pebbles (right bank of the Cher at Thésée), limestone subsoil, flint clay on the surface (left bank of the Cher at Chateauvieux)

Viticulture:
Work on the vines, plants, and soils in sustainable farming (no certification).
Sown or spontaneous cover crops depending on the plots.
Reasoned soil work (opening of soils in spring, aeration and superficial work until June, then no intervention until after harvest). Respect for nitrogen cycles.
Trellising work to direct the plant towards the sky (early bud thinning, then lifting, very late topping, and only one trimming).
Search for verticality and finesse, aeration and clarity.

Oenology:
Harvest triggered by the balance of aromatic maturity / analytical maturity.
Direct pressing at Thésée.
Skin maceration at Chateauvieux.
Cold settling, inoculation, and initiation of alcoholic fermentation between 12 and 15°C.
Then racking and light sulfiting.
Aging on fine lees for 9 to 12 months.

The wine: intense and immediate aromatic expression. Crystal purity, citrus. Digestible and fresh. Very airy.
