This wine showcases the magnificent terroir of Saint Lambert du Lattay: Les Bonnes Blanches. This terroir, recognized since the Middle Ages, is on its way to becoming a cru of Anjou Blanc.
It is an alluvial terrace composed of a layer of clay and quartz resting on a schist bedrock. The clays act like a sponge, moderating both water shortages and excesses. The vine thus benefits from a moderate but continuous water supply, one of the main characteristics of great terroirs.
It is a cool terroir, exposed to the North, leading to slow, late but complete maturations, a source of balance combining power and freshness.

The grapes, hand-harvested and sorted, are concentrated and retain beautiful acidity. This structure will carry the wine over time and contribute to the unique expression of a unique terroir.
Maceration for 12 hours before pressing, separation of the presses, and fermentation without additives using indigenous yeasts are
the main characteristics of our winemaking process.

We then age this wine in large clay amphorae for 12 months. The clay, a very slightly porous material, provides the wine with small amounts of oxygen while limiting the complete sedimentation of the lees. This slow and moderate input, combined with contact with the lees, allows the wine to refine its structure and develop an intense and complex bouquet.

Grape variety: 100% Chenin


Soil: clay and quartz on schist

Age of the vines: 45 years

Culture: simple guyot pruning, bud thinning, and leaf removal in spring. Soil and ridge work in all rows. This plowing promotes deep rooting of the vine, allowing it to better withstand both excesses and shortages of water.

Tasting: yellow color, orange reflections. Powerful nose, mineral, orange peel, stone. Dense, dynamic, intense palate. Long and smooth finish.
