Hand harvest and respect for the bunch are the key words at harvest time. Always granite, still tight vines, obviously gamay. The cuvée des fous is produced with the oldest vines of the estate: they are over a hundred years old. The vinification is traditional with whole bunches and a partial destemming, aging takes place in barrels of 10 wines for 8 months, without filtration at bottling.
A very dark and opaque color, a nose of black fruits (blackberries, blackcurrants) and spices. On the palate, soft and creamy tannins, with the impression of biting into the wine.
Ideal temperature 17°C - open 2 hours before and decant!
