Terroir: The slopes of the small hamlet of Ardenay are perched above the Layon, next to the mills, in Chaudefonds sur Layon. Cabernet franc on altered mica schists, coal sandstone, with cinérites (volcanic ashes sedimented in water). Cabernet sauvignon on rhyolite (volcanic rock rich in silica) more or less altered.


Grape Variety: 70% cabernet franc (average age 24 years), the king grape of this region, but also 30% cabernet sauvignon (average age 40 years), which is less common: cabernet sauvignon is not part of the Saumur, Chinon, Bourgueil appellations... but it has been adopted, even if it is very minority, in the "black" (schistous, west) part of Anjou, where in well-exposed soil conditions, it can bring complexity and structure. The cabernets are at their northern limit of cultivation in Anjou. On our schist soils, they can produce beautiful terroir wines that age well, provided that yields are limited, and they are vinified gently and with finesse. They then offer the structural characteristics and freshness of wines from northern terroirs.

Vinification and Aging: to give birth to the wines, not to manufacture them: not to intervene, or to do so minimally, is a very demanding choice, requiring precision and sometimes... a lot of work! No adding of yeast, no chaptalization.... ? 100% destemming - infusion-style maceration. Aging in Burgundy barrels of several wines.

As a "terroir" wine, the Coteaux d'Ardenay presents complex and deep aromas combined with a fresh and long, Loire-like palate. The dense and structured yet fine texture of this wine will allow for a harmonious pairing with characterful red meats, game, lamb leg, beef ribs or entrecôtes, flank steak or onglet. Winter dishes will also be welcome (stews, civets,...).
