This cuvée comes from a terroir of slate schists. On the label, complementary to the two other parcel cuvées, "Schistes bleus" is represented by the trigrams of the Sky, of the Aire. It symbolizes the power and energy of Anjou Noir.

Grape variety : 100% Chenin

Terroir : Blue schists (slate schists)

Harvest : Manual. Cuvée from the parcel, lieu-dit Martigneau

Vinification : Fermentation with indigenous yeasts. 12 months of aging on fine lees in tank. Cuvée unfiltered.

Sensory discovery : Intense golden yellow color with beautiful intensity. The nose presents a lovely aroma of ripe yellow fruits: mirabelle, apricot, poached pear.

Gourmet pairings : Seafood and shellfish platter, grilled or sauced poultry, goat cheeses as well as hard cheeses.

Serving: 10-12°C

Aging potential: Perfect for quick consumption but will evolve nicely over a few years.
