Domaines des Coeuriots Bourgogne Pinot noir red 2023

Please note, at the time when the wine leaves the cellars of the domaine, just after bottling, there is a slight perceptible CO2 on the palate (the wine is said to be "sparkling"), organic winemakers sometimes intentionally leave this gas (resulting from natural fermentation) to limit the addition of sulfites, but rest assured, it has no influence on the taste, and a few minutes of aeration is enough to dissipate the gas, which actually adds a very pleasant sensation of freshness!

Domaine des Cœuriots: The winemaker. Farmers 2 km from Vézelay, Claudette and Joël Defert planted Chardonnay in 1990 on their parcels classified in appellations. They delivered their harvest to the cooperative until their son Yoann took over in 2012, who focused on direct sales. The domaine, in organic conversion and whose name recalls heart-shaped fossils present in the clay-limestone soils of their vineyard, was taken over in 2022 by Marie Giraud, with Yoann Defert remaining in charge of the winery.

VINES

Terroir: Shallow loamy-clay soil from the lower Bathonian. Southeast orientation. Lieu-dit “Vaux Boutons”

Cultivation method: Certified Organic Farming in 2021. Soil worked by plowing

Vineyard area: 0.80 ha

Age of the vines: 30 years

VINIFICATION & AGING

Vinification: Manual harvest with destemming. Cold pre-fermentation for one week and fermentation for 14 days.

Aging: Aging in stainless steel tanks for 9 months. Malolactic fermentation completed. No fining

Alcohol content: 12.5%

TASTING & SERVICE

Tasting: The fruit bursts in a luscious mouth where the tannins are present and delicate. Aging potential: Drink within 7 years

Service: From 14 to 16°C
