Nout is the goddess of the sky in Egyptian mythology (in the Valley of the Kings, in the tombs of the Pyramids, she is often depicted as a woman arched over the Earth, her body covered with stars, symbolizing the influence of the stars/cosmos on the Earth (this is a little nod to our biodynamic practices as we are sensitive to this idea, even convinced, and we really like the name of this goddess).

Planted area: 3.74 ha in production

Planting density: 8,000 vines/ha Age of the vines: 30 years

Grape varieties: Cabernet Sauvignon, Merlot

Soil types: Gravelly and clay-gravelly

Cultural practices: Organic & biodynamic farming certified (FR-BIO-16 / DEMETER)

Harvest: Manual harvest

Vinification: Partial destemming (high percentage of whole clusters due to the solar vintage) no crushing, no inoculation (indigenous yeasts-spontaneous fermentation) – in cement tanks of 40, 45, 50, 55, 60, 65, 70, 75, 80 hl

Aging: On fine lees for 12 months in 12hl casks and in 400-liter barrels in a reductive environment, and 8 months in concrete tanks (mass aging before bottling) Extremely low sulfite levels, no other additives.

Coopers: Taransaud (majority), Ermitage, Berthomieu, Stockinger

Blend: 45% Cabernet Sauvignon - 55% Merlot
