It is the beautiful acidity of the folle blanche grape that makes it so suitable for seafood (indeed it is better to enjoy it at the table, not alone), and indeed for more flavor and richness, it is better to choose a Muscadet from the same excellent Lieubeau estate (Melon de Bourgogne grape).
